As someone who has never really cycled, this sounds insane. It must be really fun though at the same time. What kind of roads can you take when cycling such long distances in order to be safe at the same time?

Cycling on the road isn't that unsafe, because road law is on your side. It's never legal to hit someone, so the large majority of drivers are careful or extra-careful. Then, we have lots of bike paths, though not all are good quality. We used Komoot for cycling directions. Being on a bike you're comfortable with, which you can manoeuver swiftly is also important in how safe you feel. A bike in good condition and that matches your body size helps, and experience using it in city makes your comfortable. Off-city, in Belgium, is mostly easier than in-city, and in the Netherlands, it's first class, so much that any kid can cycle anywhere in the country.
We're doing Lille to Amsterdam, it's almost completely flat, so it's not super hard despite the added air drag from our bags.

Yeah I also checked out the path that you are gonna take, and it looks like it’s as flat as a pancake, that’s also nice when doing such a long distance trip 😄 How many hours is this thing going to take you?

It's ~5 hours of cycling a day more or less. Depends the fries and beers along the way :-)
