should idea see this setting and disable the experimental inspection warnings for me?

This setting should disable warnings when building in Gradle or editing/building in Intellij.
Have you updated your Kotlin Plugin in Intellij? If you have, then you could try to sync Gradle model ("refresh all Gradle projects" action)
