Excited to share Vitality v0.1.0!

Vitality is a Kotlin Multiplatform library providing unified health data access across Apple HealthKit (iOS) and Health Connect (Android). It offers
comprehensive health metrics, real-time monitoring via Kotlin flows, workout management, and medical records support through FHIR standards.

v0.1.0 is the initial release with full core functionality ready for use and a sample project demonstrating some of its core capabilities.
