one problem i've run into quite a bit is that it takes quite a while for IntelliJ to support the newer versions of AGP and Gradle. Is there anyway around that?

It’s a chicken-and-egg problem. JetBrains cannot create the IntelliJ plugin until the Android Gradle Plugin is released.

@Chrimaeon is correct. For what its worth, in one of our recent Jetbrains interviews, several questions were asked that seemed like they are trying to find ways to get Gradle plugins, IDE plugins, android library versions, etc better handled, but I know that's quite a challenge
