Bonjour! I want to learn data science later since years The thing that blocked me, I think, is that I had no idea what I don’t know that I don’t know. The main problem is that you discussing not the domain, but tools. Different listed tools are used in different fields (not all of them are considered DS). First of all you need to state what problem do you want to solve and then we can help you with a tool to solve it.

Thanks for your feedback. Makes a lot of sense. I am a polyglot (french/spanish/german/spanish/italian/japanese) so I would love to work in the domain of language learning there are some pretty amazing tools in this domain like Quazel who enables you to talk with an AI to practice the target language if you are too shy to do it in the street https://talk.quazel.com/

Again, you are starting with tools, where you should start with the domain problem.
Data science is not "real" science. But it has a research aspect. It means that you can't do it without understanding what you are doing - the domain field.

maybe I don’t understand what you mean by domain here. I am interested by what can be done to help people learn foreign languages using whatever technologies and research (done by others) are available

Than you need first to define how you want to do it and select proper tool afterwards. People usually learn languages using applications which have nothing to do with DS.

I have ten years of experience on what people are struggling with when they learn a foreign language, and apps like Duolingo or Anki are only a small part of the solution. Then start reading articles on NLP. There are a lot of them. After grasping how it works, you can start with tutorials on how to do it using specific tools.
