It's not resolving watch below for some reason....is there some other dependency that needs to be pulled in for that? (basing code on what's in https://www.apollographql.com/docs/kotlin/caching/query-watchers/)

ah, needed com.apollographql.apollo3:apollo-normalized-cache

Yep, exactly. Also because you can use the runtime without the cache so the cache is 100% opt-in
