I'm not sure what they react to and it feels like they sometimes just work and sometimes just don't.

Unfortunately I am going to have to resort to only words because since the last update Gnome seems to have broken screen recording. I am sorry for that, if it starts working I will update this thread.
However I think I have figured out the problem. Since you asked for more detailed information I wanted to do more detailed testing.
It appears that the drawer does in fact open reliably, however it does so only when your gesture movements are unreasonably and unnaturally fast. Sometimes the first slower gesture after the last fast one will in fact open the drawer, however any subsequent slower gesture will not.
