I don’t think you can gauge interest in this channel, but if you do it and blog, I believe people will find and use it

That is true (presumably Slack lacks features for doing polls, measuring statistics etc). Using a blog system like Medium for example would provide basic statistics facilities (eg graphs for # of readers by day).
