On my current project the percentage is Kotlin 70, java 30 but moving towards that kotlin 100 and compose 100 too.

For compose it will take probably similar amount of time (even with team growth) for us, there are a lot of UI to rewrite

Yeah I have noticed that too. One thing that helps is that companies constantly deprecate or re-construct old features entirely. That is a good opportunity to swap up.
